We’re picky about where we get our ingredients. As much as we can, we source from domestic partners who share our passion for quality. Our chili peppers come from Rio Valley, a family-owned farm in Las Cruces, NM, that harvests, washes, and sorts all the peppers by hand. Our mild roasted coffee beans come from Safai, a coffee roaster in our hometown of Louisville. Safai’s handcrafted, direct trade coffee has amazing flavor and is sustainably and responsibly grown and produced. It feels good working with people who care about the same things we do.
We slow-smoke our blend of chili powder in small batches using industrial smokers. Trays of spices are slow-smoked using staves from oak bourbon barrels that once held some of Kentucky’s finest bourbon. We mix the chili powder with Safai’s coffee beans to create a spice rub with robust flavor. Our Bourbon Smoked Chili & Coffee Rub can give new life to any dish.
